Brussel Sprout - Passion Fruit, Macadamia, Coriander, Meaty Jus

Spectrum is a modern European restaurant located in the Waldorf Astoria Amsterdam, a luxury hotel on the Herengracht canal. The restaurant has two Michelin stars and is led by executive chef Sidney Schutte, who has a creative and inventive culinary style influenced by his experiences in the Netherlands and Hong Kong.

The restaurant offers a tasting menu featuring familiar yet intriguing dishes, curious yet understandable, and controversial yet comforting. The dishes showcase the best local and seasonal ingredients and some exotic flavors from Asia. Some examples of the dishes are brussels sprouts with passion fruit, macadamia, and meaty jus, blue crab with kale, black truffle, sweet corn, and tonka bean.

The restaurant also has an extensive wine list, curated by sommelier Sascha Speckemeier, that complements the food and enhances the dining experience. The restaurant has a relaxed and elegant atmosphere, with a view of the hotel’s tranquil garden.

The service is attentive and professional, and the staff are happy to explain the dishes and answer any questions. Dining at the Spectrum is not just a meal but a journey of discovery and delight, where you can use your senses and appreciate the spectrum of flavors and textures that Chef Schutte and his team create.

The Spectrum is one of the best restaurants in Amsterdam and a must-visit for anyone who loves fine dining and wants to experience something unique and memorable
