Sens was a fine dining restaurant located in the Hotel Vitznauerhof on the shore of Lake Lucerne. The restaurant offered a stunning view of the Swiss Alps and the lake, as well as a cozy lounge and a beautiful terrace. Sens was known for its innovative and creative cuisine, which combines regional products with exotic flavors and fermentation techniques.
The chef behind Sens was Jeroen Achtien, a young and talented Dutch chef who has worked in some of the best restaurants in the world, such as Noma in Copenhagen and The Fat Duck in London. Achtien is passionate about experimentation and umami, the fifth taste that enhances food flavor. He uses fermentation as a tool to create new and surprising dishes, such as fermented carrots with black garlic and goat cheese or fermented beetroot with smoked eel and horseradish. He also works with local farmers and producers to source the freshest and highest quality ingredients, such as cheese, meat, fish, vegetables, and herbs.
Sens offered a variety of menus, ranging from four to eight courses, as well as a vegetarian option. The menus changed seasonally and according to the availability of the products. The restaurant also had an extensive wine list, featuring wines from Switzerland and around the world and a selection of cocktails and spirits.
Jeroen Achtien moved back to the Netherlands and took over the Inter Scaldes restaurant—another go-to location for food lovers.
