Mauro Colagreco is the chef of the Mirazur, a three-Michelin-starred restaurant in Menton, France. He is known for his biodynamic philosophy and his connection to nature.
In 2020, he introduced a new menu concept called the Lunar Menu, based on the lunar cycle and its effect on the plants in his garden. The book “Under the Sign of the Menu” describes his way of cooking in detail and shows various recipes from the Mirazur restaurants. The book is beautifully illustrated, and recipes are covered in detail. It’s a must-have and must-read for each food lover.
The Lunar menu consists of four offerings: Root, Leaf, Flower, and Fruit. Each corresponds to a phase of the moon where the type produces the most vibrant and energetic results.
For example, the Root menu is served during the new moon, when the sap is concentrated in the roots of the plants. The Lunar Menu aims to create an entirely new experience for guests by aligning the cuisine with the natural rhythms of the Earth and the moon. In December 2021, I enjoyed an outstanding Roots lunch menu at the Mirazur. It was one of the best experiences I have had.
Colagreco believes that this way of eating can enhance the health and well-being of diners, as well as respect the environment and the land’s biodiversity.
